Don't fear the beet


One of my favorite meals while serving an LDS mission in Uruguay started with a stop at the vegetable stand. We would buy every vegetable we could find, and peel and chop it all into the most beautiful salad I've ever seen. We would top it with some lemon juice and salt and sometimes some broken up wheat crackers. Heaven. It was the best lunch ever. I looked forward to it every day. That was the first time I tried raw beets, and they've been a favorite ever since.* When I saw this recipe in this cookbook I was excited to try it. I'm posting it here with my own modifications.

Beet Burgers on Romaine

1 Large beet
1 Carrot
1/3 C pistachios
1 avocado
The juice from one lemon
sea salt to taste
Capers (for garnishing - don't put in the food processor!)
Romaine lettuce leaves.

Put the first 6 ingredients in the food processor and process until blended or finely chop all ingredients and mix.

Place about 1/3 cup of mixture on a lettuce leaf and garnish with capers.
Enjoy!

p.s. beets can turn your pee pink, don't freak out. You are not bleeding internally. I wish I had known that when I first consumed a large quantity of beets. Sigh.

*I never really had canned beets growing up, but I am told they are disgusting. Raw beets are very different, they are crunchy like carrots and a little sweet.
